Ingredients Needed:

  • ¼ cup kosher salt (60 ml)
  • 2 tablespoons sugar (25 g)
  • Grapefruit wedge, plus extra for garnish
  • 1 cup freshly squeezed pink or ruby grapefruit juice (240 ml, from 1 to 2 grapefruits)
  • 1 cup tequila blanco (240 ml, such as Casamigos)
  • ¼ cup freshly squeezed lime juice (60 ml, from 2 limes)
  • 2 tablespoons simple syrup (30 ml, see note)

How To Cook Pink Grapefruit Palomas:

  1. Prepare the Glasses: On a small plate, mix ¼ cup (60 ml) salt and 2 tablespoons (25 g) sugar. Run a grapefruit wedge around the rims of four 10-ounce (300 ml) glasses to moisten, then lightly dip the rims in the salt and sugar mixture. Set aside to dry.
  2. Mix the Cocktail: In a pitcher, combine 1 cup (240 ml) grapefruit juice, 1 cup (240 ml) tequila, ¼ cup (60 ml) lime juice, 2 tablespoons (30 ml) simple syrup, and a pinch of salt. Stir to blend.
  3. Shake and Serve: Fill a cocktail shaker halfway with ice and pour in the cocktail mixture (you may need to do this in batches). Shake vigorously for 30 seconds to chill and slightly dilute the cocktail. Pour into two of the prepared glasses, add a few ice cubes, and garnish with a wedge of grapefruit. Serve ice cold. Repeat with the remaining mixture and glasses.

Recipe Tips

  • Use Fresh Ingredients: For the best flavor, always use freshly squeezed grapefruit and lime juice. Fresh juice is much more vibrant and aromatic than store-bought options.
  • Chill Your Glasses: To keep your Palomas colder for longer, chill your glasses in the freezer before serving. This helps maintain the perfect temperature.
  • Balance the Sweetness: Adjust the amount of simple syrup to suit your taste. Start with 2 tablespoons and add more if you prefer a sweeter drink.
  • Mix in Batches: If making a larger batch, shake the cocktail in batches to ensure it’s well-mixed and properly chilled.
  • Garnish for Style: Garnish each glass with a grapefruit wedge to enhance presentation and add a hint of extra flavor.

How To Store

Transfer leftover Pink Grapefruit Palomas to an airtight container and refrigerate for up to 2 days. Stir well before serving.
