Ingredients Needed

  • 6 to 8 large kale leaves , centre rib removed
  • 6 ounces  Brussels sprouts, trimmed, halved, and cored
  • ½ small head radicchio, cored
  • ¼ cup freshly squeezed lemon juice (about 2 lemons)
  • ½ cup good olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • 6 ounces Parmesan cheese, in a chunk
  • 1 cup dried cranberries

  1. Shred the greens: Thinly slice the kale, Brussels sprouts, and radicchio crosswise like coleslaw. Place in a large bowl.
  2. Make the dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  3. Dress the slaw: Pour just enough dressing over the salad to lightly moisten it, reserving the rest.
  4. Add toppings: Use a vegetable peeler to shave the Parmesan into large shards. Add Parmesan and dried cranberries to the slaw.
